Okra with Gorgonzola Cheese and Bacon

Okra is one of my favorite summer vegetables, and the best thing about it is there is so many ways to prepare okra.

This is a recipe my mom discovered from a friend at the Mt. Pleasant Farmer's Market. We have always sauteed okra with a little bit of olive oil, salt, and pepper which is fabulous for a lighter side dish. This recipe is amazing because you saute the okra in the bacon drippings! When the okra has fully cooked, add the Gorgonzola cheese and crumbled bacon, stir and serve.

Yields1 Serving

Ingredients:
 1 lb. of fresh Okra, washed & trimmed
 1 Tablespoon of Olive Oil
 1 teaspoon Kosher Salt and Pepper
 4 slices of Bacon, cooked and crumbled
 1/4 cup Gorgonzola cheese

Directions:

Rinse off the okra in a colander and trim off the tops of the okra.

First, spray a medium sauté pan with cooking spray. Cook the bacon and drain the grease leaving the bacon drippings.

Lightly spray the skillet with cooking spray. Then add the tablespoon of olive oil. Turn the burner to medium high heat and place the okra in the heated pan. Cook okra (stirring often) for 4-5 minutes over medium high heat. Reduce heat to medium or medium low and cook for 4 minutes or until the okra are cooked (they will be bright green in color).

Next, turn the heat to low and add the bacon pieces and Gorgonzola cheese. Cook for about 2 minutes. Stir together and serve.
