Okra is a staple of any Southern meal. While many people have a bad taste for Okra given that it's often boiled, this recipe is for Sauteed Okra which makes the vegetable very enjoyable since it is not slimy like it is when it is boiled.

Spray a large skillet with cooking spray and add olive oil. Heat the olive oil over medium high heat.
Next, add the okra and then the seasonings.
Cook the okra for about 5 minutes on medium high heat; stirring often (the okra will stick to the pan easily). Turn the heat down to medium and continue cooking for 5-8 minutes or until the okra are done. I judge the doneness of most of my sautéed vegetables, like okra and asparagus, by the change in color. Okra will turn a bright green. You want to make sure you do not overcook okra because the side of the vegetable will tear.
