Shrimp Fried Rice

- 2 Tbsp of Olive Oil
- 2 cups Shrimp
- 1 Garlic Clove, minced
- 1/3 cup Onion, chopped
- 2 cups of cooked Rice
- 1 Egg, slightly beaten
- Salt, Pepper, and Soy Sauce to taste
- Sauté shrimp using the following directions. In a large lightly greased skillet, heat one tablespoon of olive oil over medium high heat. Add minced garlic and cook for 1 minute. Then add chopped onions and sauté about 2 minutes. Reduce heat to medium. Add the shrimp and cook 5-7 minutes. Once cooked, move the shrimp to a plate and chop.
- Add a tablespoon of olive oil to the skillet you used to cook the shrimp. On medium high heat, add rice and sauté for 2-3 minutes. Add egg and stir rapidly until egg is well mixed with rice.
- Reduce heat to low, add shrimp and seasonings. Heat through.
